What is erythritol and why does it behave so differently?

Erythritol is a 4-carbon sugar alcohol (polyol) with molecular formula C₄H₁₀O₄ and molecular weight 122.12 g/mol. Produced industrially by fermentation of glucose with the osmophilic yeast Moniliella pollinis.

The key to GI=0 and 0 kcal: approximately 90% of ingested erythritol is absorbed in the small intestine but not metabolised — it circulates in the bloodstream unchanged and is excreted renally. No enzymatic cleavage occurs. No interaction with intestinal glucose transporters (SGLT1, GLUT2). No insulin response.

EU official designation: 0 kcal/g under Regulation 1169/2011. GI=0 health claim authorised under Regulation 1047/2012. ADI not specified by EFSA (highest safety category). E968 approved quantum satis under Regulation 1333/2008.

Formulation

Erythritol in food production — baking guide

1. Ratio: 130 g erythritol = 100 g sugar

Use 1.3:1. Volume in dough remains nearly identical — unlike high-intensity sweeteners (sucralose, stevia) which operate at ppm and provide no bulk or texture.

2. No Maillard reaction — paler results

Erythritol is not a reducing sugar. Add milk powder, WPC 80 or egg yolk as Maillard precursors. Increase baking temperature by 10–15°C.

3. Cooling effect — manage it

Endothermic heat of solution (−40 J/g) creates a cooling sensation. Desirable in mint chocolate, ice cream, citrus drinks. Undesirable in vanilla cream. Solution: replace 30–40% with stevia or sucralose.

4. Recrystallisation in frostings

Dissolved erythritol recrystallises on cooling — frostings become sandy. Max 60–70% erythritol in sweetener system; add inulin, glycerol or sucralose to prevent.
